Dry cider made with 100% Ontario grown Golden Russet and Northern Spy. Aged for 4 months, and fermented with a wild ON yeast, this dry cider has notes of guava and citrus. Bronze medal winner at GlintCap 2015: the largest international cider competition in the world.
This cider is dry hopped with 'Hop X,' a brand new Ontario hop varietal. Hop X gives this cider flavours and aromas of orange, strawberry, and lychee.
Collaboration with Dillon’s Distillery: We’ve aged our cider aged on spent gin botanicals (from their Gin 22) for an infusion of clove, citrus rind, and vanilla. Gold medal winner at the 2015 Ontario Cider Awards.
A blend of wild fermented Pear Scrumpy and 100% Brett fermented cider (made with Escarpment Labs Mothership blend). It's got a Bretty nose, acetic flavours, and a surprisingly clean finish.
Dry hopped cider with Citra and Hop X. Super tropical cider - Hop X is grown just south of Collingwood by Clear Valley Hops. It is very tropical and plays with the incredible citrus character of Citra well. The Citra is sourced from B.C.
Release will be the end of April 2016.
Cider aged in a Chardonnay barrel, finished with lactose and fresh Niagara peaches.
Apfelgose is a new cider style we invented, made with inspiration from German Gose beers. It is soured with Lactobacillus, steeped with coriander, and finished with sea salt. We released a small test batch last year and will be bringing it back this year due to popular demand.
We do casks to order, many of them exclusive one-offs for specific requests. Releases to date include a Maple Apfelgose, Mary Rose's Apfelgose (Rosemary + Sea Salt), and Bird's and the Bees (wildflowers + honey).
