Aster is a skin contact cider/wine hybrid made with Gewürtztraminer and Wickson crabapples. For this hybrid, we blended 50% high acid Wickson crabapples with 50% Gewürtz that was aged on Wickson pomace. Both fermented with native yeast. Aromatic and textural. SO2 added at packaging only (15ppm). 80 cases made.
Note: This blend is still, not sparkling. We felt that this made it a more exciting product as sometimes carbonation can distract from the subtleties of a wine or cider.
