Esopus Spitzenburg
Esopus Spitzenburg is an historic North American apple variety.
Discovered circa 1770 on the shores of the Hudson River in Esopus NY, it quickly became famous for being Thomas Jefferson's favourite apple.
It's so much more than that though. Spicy and tropical, it's one of those apples that gets better after a few months of ageing in the cellar (before pressing it into cider).
This is our second vintage—the first was never released because it was stolen entirely during a break in at our cidery.
What's it like? It reminds us of eating ripe pineapple and papaya, juice squirting into our cheeks. The pineapple is slightly green, like you accidentally chopped a few of the leaves into your fruit salad.
There's something woody/herby in the aroma, like crunching maple leaves and white pepper together with a mortar and pestle.
This vintage was wild fermented (like all our ciders) and is still on lees.
