Mü is a microdose of alcohol and a macrodose of aroma. A co-fermentation of Muscat and Riesling, macerated on skins and bottled as one.

Some things are better together.

It was clear to us that each of these grapes could lift the other if we stopped trying to segregate them intellectually. They were asking to play together.

Mü is visually rosé but literally orange. It refuses to be defined.

What's it like? Watermelon candy and grapefruit pith. Hibiscus and mandarin orange. Tomato candies. Herbal bouquets. Bottled with a splash of apple juice for natural bubbles (pétillant naturel).

Herbal, orange Riesling mixes with floral, bitter Muscat to create something absolutely magical. The aroma is out-of-this-world juicy, but the grape tannins rein it in perfectly. This wine was an accident 3 years ago, but it's so good we've made it annually ever since.

Mü is consistently my favourite wine each year. It straddles the line of 'nerdy enough to discuss animatedly, but crushable enough to wonder where the bottle went after 30 minutes.'

9.7% ABV | 750mL

Ingredients: Muscat, Riesling, apples. Gluten free.

Wild ferment. Zero added sugar. Vegan.

Perfect summer drink

The mix of apple and grapes is really successful. I have ordered this wine a few times and it has been a hot will all who have tasted it

Mmmmmmü!

This is only my second Pét Nat so I dont have an educated opinion as to how this stands against "typical" Pét Nats but I can confirm that this was one of the most delectable sparkling wine experiences of my life. Incredibly clean, refreshing and with a very subtle complexity of fruity/flowery notes. So refreshing I wanted to glug it straight down like a teenager behind the gym at a school dance (I've been there!). But that would be a crime. Suffice to say that this bottle did not last long. Wish I could afford a case of it!

It’s difficult to talk about the salubrious nature of a thing like wine. Alcohol, an inherently addictive substance, is also a carrier of flavour and aromatics. It is and has been an important part of the human experience for millennia.

The Muscat grapes from this site in Lincoln Ontario are incredibly low in sugar. This provides us with the opportunity to make a more healthful wine. Mü is just 9.2% and I couldn’t be happier.

Technical details

Pronouned: "Mew"

Varietals: New York Muscat (a hybrid, rosé Muscat, grown in Ontario), Riesling, and a mix of heritage apples (Northern Spy + Red Prince).

Vintage: 2021

Alcohol: 9.2%

Vineyards: Muscat from Backus Farms in Lincoln Ontario, farmed by Douglas Backus and family. Conventional farm, using sustainable practices (eg. baking soda + sulphur sprays). Deep, sandy soil.

Riesling from Hughes Vineyard in Beamsville ON, farmed by Ed Hughes. Conventional farm, but the only farm in Ontario certified sustainable by the Grape Growers of Ontario.

Apples from Twin Pines Orchard in Thedford ON. Conventional orchard, temperatures moderated by close proximity to Lake Huron.

Vinification: Grapes hand sorted by us. Crushed and left to wild ferment on skins for 20 days. Apples were pressed by Twin Pines and their juice added to the Muscat/Riesling blend for a bottle co-fermentation. Pét Nat. Unfined, unfiltered, sediment is expected.

Serving Temp: Chilled. Put Mü in your fridge at least 2 hours before serving. For best results, reseal bottle with a sparkling stopper, and drink within 48 hours of opening.
