Pirouette is a collaboration from Revel Cider and Cidre Sauvageon from Montreal.

In the summer of 2022, we found ourselves in Montreal, thrilled to taste what Cidre Sauvageon was up to. We tasted with Pauline and made fast friends—Pirouette was destined to be.

Months later we combined a plethora of Ontario and Quebec fruits into a single mega blend. From Quebec: asian pears, elderberries, currants and apples. From Ontario: dark plums, gewürztraminer, hibiscus and violets. It's a multi-species co-ferment, grown and bottled in 2 provinces.

What's it like? Pirouette drinks like dancing through a dream of raspberry leaves, peach candy and pomegranate seeds, before falling into a soft summer flowerbed. High acid, and high energy, it's delightfully balanced even with more species than anything we've ever made. 

Drink it on a Tuesday, when you're A/C gives out.
