Research Project 4
Research Project 4 is a blend of the most aromatic varieties we brought in from the University of Guelph's research orchard last year.
It's made of Frequin Rouge, Muscadet de Dieppe, Somerset Redstreak and Stokes Red.
Instead of breaking these varieties up into different barrels, we wanted to see what would happen if we put them all together. We weren't disappointed.
What's it like? Research Project 4 smells like lightly caramelized tangerine skins. It has some perceptual sweetness, despite it being completely dry. Candy apple aromas paired with textural tannins balance it perfectly. For us, it's very much in the world of French cidre, but unfiltered and truer to the fruit.
7.1% ABV | 750mL
We added a little bit of Research Project #9 to this (the crabapple blend), to rein in some of the sweet aromatics. It's drinking beautifully now but we're confident it'll be even better after a year in bottle.

They're dedicated to addressing the economic and social barriers that affect Black youth ages 14 and up who aren't employed, or in education or training. They achieve this by collaborating with Black youth, their families, employers, and the broader community in 3 areas of work: Career Training, Sector Growth and Social Enterprise.
