All the Grapes
Happy holidays! We've put together a couple gift boxes that you (or a friend, loved one, secret crush) can enjoy safely at home.
This 3-pack includes 3 wild fermented wines from our ibi project.
The bottles included are:

- 1xJoplin (single varietal Maréchal Foch—still)
Who's it for? The natural wine fiend, or those just excited about something a little different.
Get to know them:
Single varietal Maréchal Foch, from 49 year old vines.
Planted in 1972, in Lincoln ON. Fermented on skins for 13 days, in stainless steel, with our native microflora.
Maréchal Foch is a hybrid red grape, that's also red fleshed or teinturier.
Bottled with zero sulphur, unfiltered and unfined.
What's it like? 2020's heat has brought a Syrah-like spice to this vintage. Think peppercorns, nettles, and foraged black raspberries.
Bright and energetic, drink it slightly chilled.
9.7% ABV | 750mL
A co-ferment of Muscat and Riesling, Mü is a microdose of alcohol and a macrodose of aroma.
Both grapes were fermented on skins, and the blend was bottled with a splash of apple juice for a little sparkle.
What's it like? Watermelon candy and grapefruit pith. Wild herbal bouquets. Lightly floral, yet tannic and textured. This one's a trip.

Sauvignon Blanc, wild fermented on skins for 6 days. Lightly sparkling
Handpicked, and grown on vines planted in 2011 by our friend Ed Hughes, the only certified sustainable grower in Niagara.
What's it like? Cleo is guava nectar, lifted by the structure of light skin contact and soft sparkle. Oxygen and our native microflora have come together with these grapes to create a round and soft pond of tropical silken joy. You'll find notes of guava, quince and pear.
