What is Champagne?
Aster is a skin contact cider/wine hybrid made with Gewürtztraminer and Wickson crabapples. For this hybrid, we blended 50% high acid Wickson crabapples with 50% Gewürtz that was aged on Wickson pomace. Both fermented with native yeast. Aromatic and textural. SO2 added at packaging only (15ppm). 80 cases made. Very Champagne-like.
Note: This blend was originally still but has picked up some carbonation from native microflora activity in bottle. 15ppm of SO2 clearly wasn’t enough to prevent our spontaneous/house culture from chewing on grape/apple compounds. It’s become even more interesting as a result - think bubbly skin contact white wine. Yum!
