We first made Emergent Property back in 2016. After vowing to only use fruit we could source locally, we thought we might never make it again.
In 2018, a friend of ours asked us what kind of herbs we might like to use. We answered, anything that grows well here, with citrus character. Last summer, he delivered. Lemon Verbena is incredibly citrus forward, but can be grown organically in our northern summers.
Emergent Property was aged in Tequila barrels for 20 months. Fermented with our native microflora, from apples harvested in 2017.
