Our newest baby was hibernating in ex-Chardonnay barrels for 12 months. It spent that time soaking up oak body which gives just enough perception of sweetness to lift the raspberries we added.
Raspberry seeds and our native Brett character are prevalent in the aroma, with a touch of volatile acidity lifting the fruit. Sour raspberry acids play with the tannic structure of the barrel and the general crunchy seediness of this cider.
It's a barrel aged raspberry cider with our native yeast character that we've come to know and love. It's not super complicated, but it is delicious.
