A single varietal Golden Russet cider, from 2019.
Russeting is a genetic characteristic of this varietal: a tendency of the skins to become tougher, thicker and darker.
The russeting process removes some of the water from the fruit, resulting in a higher alcohol cider with richer body.
In flavour, this adds width and a kind of nuttiness. Like we added cashew oil to the cider except also not at all like that. It's tough to describe.
The aroma is youthful. Meadow wildflowers. Earthy mixed nuts. Haunting sweetness and that distinct Russet flavour.
This vintage of Golden Russet has the texture of warmed honey. A super soft almost lactic acid adds a textural component that just keeps on giving.
