Maréchal Foch Piquette
Maréchal Foch is one heck of a grape. High acid with a ton of salinity, it's vibrant and alive. We're lucky to know a vigneron in Lincoln who has 50 year old Maréchal Foch planted.
After pressing our Maréchal Foch this year we added the skins to saline water from the Guelph aquifer. After 3 days we pressed the skins again to make this gorgeous little thing.
What's it like?: At first this vintage of Maréchal Foch piquette tasted like blueberries and dark chocolate — but over the last few weeks it's developed a dried apricot aroma too. It's dry, tart and delicious.
2.9% ABV | 750mL
Ingredients: Maréchal Foch skins, water. Gluten free.
Wild ferment. Zero added sulphites or sugar. Vegan friendly.
