Maréchal Foch Piquette
Maréchal Foch is one hell of a grape. High acid, with baker's chocolate bitterness, it's vibrant and alive. We were lucky this year to find a vigneron in Lincoln who had 47 year old Maréchal Foch planted.
After whole cluster pressing the grapes we added the skins to the last of our apple water* from 2018. 24 hours later we strained them out to give us this gorgeous little thing.
Wild ferment, zero added sulphites. 48 cases produced.

*We made apple water last winter by letting apple juice freeze outside. After decanted the concentrated juice, we thawed out the blocks of ice left behind.
