Marisol 2021
Marisol is a botrytis affected Cabernet Franc from 2021. Botrytis is the 'noble rot' responsible for some of the world's best Riesling, and the famous Tokaji wines of Hungary.
So we were intrigued to say the least.
The grapes were planted in 1995, and grown in Beamsville, Ontario. Marisol spent 36 days on skins, and was fermented with native yeast in stainless steel.
What's it like? Marisol is soft and silken, delicate and powerful. It invites us in with plush strawberries, roasted peppers and fine chalky tannins.
It's easy, yet robust. The kind of wine that you can turn your brain off for, or dive deep into its nerdy depths. Botrytis presents itself subtly with quiet notes of raisins, caramel and creamed honey.
11.7% ABV | 750mL
Ingredients: Grapes. Gluten free.
Wild ferment. Zero added sugar. Vegan.
