We love Saison over here. The ageing potential, texture and yeast character enchants us.
Rob from Shortfinger is kind of crazy. But he makes nice Saison. We were tasting barrels with him and thought it might be nice to blend one with perry to balance the acidity. Before we could talk about it more, we found Rob in the cidery, stealing Maréchal Foch grapes in the dead of night.
We made a deal. Rob had been holding out on us for years, with a secret crabapple tree of untold deliciousness. We decided if he wanted grape skins, we wanted crabapples.
To keep our friendship intact, we blended everything together and called it a collab. Our version got a little bit of Gewürztraminer to soften it up. The result is a delicious tart sipper.

What's it like? It starts with aromas of candied cherry, and white grapes (think Viognier). The saison portion adds a whisper of wood and aged hops. Flavour-wise it's bright and tart, with textural oak and soft hop bitterness to balance the fruit. It finishes with a slight butteriness, which feels reminiscent of barrel fermented Chardonnay.
It's a bit of an adventure, and a really nice halfway point for lovers of saison and natural wine.
