Some apples are better than others.
Porter's Perfection is a traditional cider apple, discovered in the UK two centuries ago. It's classified as 'bittersharp' and the apples themselves are quite tannic. They also grow stuck together like little brioche buns!
They're freaky little guys (just the way we like them) - and here's why:
What's it like? Porter's Perfection's evolution in bottle was gentle this year. It's taken on subtle notes of white pepper and citrus, with something slightly woody in flavour.
The acid is fresh and citric, with a savoury depth we can't get enough of. Think river rocks, orange pith and acidity for days. We bottled Porter's Perfection as a pét nat for soft. natural bubbles—to let the apples truly shine.
You'll notice some sediment in the bottle; we like to gently mix that in before opening for just a little more texture.
There are only 39 cases in existence.

Production Terms:
Pét nat is short for Pétillant Naturel (French for naturally sparkling). It just means that we bottled it before fermentation was completed. Allowing fermentation to finish in bottle creates those tiny bubbles we love — those same small bubbles everyone loves in Champagne. Pét Nat is just a more natural way to do it.
