Research Project 9
Last fall we had the incredible opportunity to work with fruit from John Cline, Ontario's leading pomologist at the University of Guelph's research orchard.
We brought in 37 different varietals, and created 9 different blends. This is the 9th blend, made with the 8 different crabapple varietals on the site. This blend is bottle conditioned, and will cellar beautifully.
What's it like? The aroma is a touch of citrus and soft barnyard funk. The flavour is dates, golden raisins and apricot skins. It drinks somewhere between spontaneously fermented saison and a light orange wine. It's super drinkable now, but we're very excited to see how it ages.
The varietals in this blend are:
Almata, B10C4, B17C4, Burford, Michelin, Red Fleshed Crab, Red Glow and Scarlet Surprise.

$500 from this release was donated to the Careers, Education and Empowerment Centre for young black professionals.
They're dedicated to addressing the economic and social barriers that affect Black youth ages 14 and up who aren't employed, or in education or training. They achieve this by collaborating with Black youth, their families, employers, and the broader community in 3 areas of work: Career Training, Sector Growth and Social Enterprise.
