Side Trail
Wild fruit gives us butterflies.
Side Trail is a foraged perry. When our friend and forager Nicolas brought us these unnamed wild pears, we couldn't say no. They were incredible tannin bombs when first picked, but after a little time to ripen, the tannins softened considerably and the aroma completely changed.
We milled and macerated them in perry for weeks to get as much as we could out of the skins.
What's is like? Citrus, spice and dried lavender in aroma, creamy tangerine meringue in flavour.
Residual pear sugars combine with a soft lactic note to create that citrus meringue vibe.
The aroma is complex, spices and soft lavender notes are present throughout. There's a touch of volatile acidity here, but just enough to lift the other aromas.
We've done all the cellaring needed for this bottle. Chill well, and drink fresh.
