Stoke's Red has quickly become a new favourite apple varietal. It's very different from what we normally make.

The cider is bittersweet, with high tannins but low acid. Canadian fruit tends to be high acid with our cold climate, but Stoke's Red has about half the acidity of our other bottlings: letting the subtler sweeter notes of the fruit peek through.

What's it like?: We get gentle whiffs of strawberry and roses in the aroma, but there's a liqueur-like element too. Stoke's Red is rich, tannic and weighty in all the best ways.

This is our first time working with this variety and we couldn't be happier. We bottled it as a pét nat to let it grow into its truest form—with as little intervention as possible.

6.8% ABV | 750mL

Ingredients: Stoke's Red apples. Gluten Free.

Wild ferment. Zero residual sugar. Vegan.

Production Terms:

Pét nat is short for Pétillant Naturel (French for naturally sparkling). It just means that we bottled it before fermentation was completed. Allowing fermentation to finish in bottle creates tiny bubbles — the same small bubbles everyone loves in Champagne. Pét Nat is just a more natural way to do it.

The most rustic Revel I had so far

You guys are impressive. You managed to work on your yeast to lower the high acidity and work on apple varieties that are quite rarely used around. This is the most rustic one I had from you so far.

The apple aromas are definitely on strawberries but the slight bitterness of the tannins give an overall dryness to it that is quite something. The slight acidity balances it perfectly.

This is the closest I felt to my homeplace (Britany) while drinking one of your ciders.

Revel Cider

Thanks so much Pierre! This means so much, I was just in Brittany last summer and fell in love with the cider there. I'm so glad you liked the direction of Stoke's Red. I recommend you also try Bittersweet Freedom when it comes out this summer, it's similarly higher tannin and low acid (and it's my absolute favourite cider we make).
