Tépache is an old favourite of ours.
Traditionally a Mexican beverage, made with pineapple, spices, and unrefined sugar. We make it a little differently with cider as the base.
This batch was aged in tequila barrels for two years, then bottle conditioned. Tart, with soft tropical fruit and spices. Extended ageing has folded fruit and spirit into one.
2017 was the last year we brought pineapples into our cidery. In an attempt to only use fruit we can find locally, we will no longer be using tropical fruits. Savour these last few bottles.
