Joyful and wild, this pack is full of wild fermented wines that are nerdy, wild and so, so juicy.
The Wine Pack includes 1 each of:
Elvi: A sparkling blend of orange Riesling and Sauvignon Blanc, we aged Elvi on Dolgo crabapple skins for a beautifully delicate tannin addition. Elvi is sparkling and the aroma is like a tropical fruit salad of guava blossoms, mangosteen, lychee and walnuts. 11% ABV | 750mL
Willow: A wild and nerdy blend, Willow started with Muscat Ottonel aged in a single barrel lined with beeswax. We blended it with skin contact Seyval Blanc and added a splash of pear juice from organically grown Golden Spice pears for a light bottle fermentation (and those natural bubbles we just love). It's textured, floral and citrusy, somewhere between Txakoli and Limoncello (but totally dry of course). 11% ABV | 750mL
Luna: A dry, skin contact white aged in our clay amphora. Luna is Sauvignon Blanc aged on the skins of Sauv Blanc, Riesling, Chardonnay and Hyslop crabapples. It's textured and saline, but subtly so—grape and apple tannins woven together with the minerality of our Italian amphora. 10.6% ABV | 750mL
Lantana: A zero sulphur pét nat, exclusively from Seyval Blanc. This hybrid white grape reminds us of Melon de Bourgogne and Chardonnay; more savoury/salty than fruit forward. Because of this, it felt like the perfect thing to make very highly sparkling. We split the fruit three ways before bottling: one portion was free run juice, another aged on skins, and the last was barrel fermented. Chill well before opening (treat like you would Champagne). 12% ABV | 750mL
Apollo: Zweigelt rosé harvested in 2020. Violets meet Swedish berries in the aroma. Malic acidity lends a crispness, while subtle honeyed notes add width. The fruit is punchy raspberry mineral water meets plump honeydew, with a dash of dark plum flesh. It drinks like our favourite French rosés. 10% ABV | 750mL
Marisol: Botrytis affected Cabernet Franc from 2021. Soft and silken, delicate and powerful. Up front the aroma is all tourtière and raisins. It has notes of strawberries, bell peppers and rosemary bark. Fine chalky tannins keep us coming back for more. 11.7% ABV | 750mL
Each bottle is 750mL, gluten free with zero residual sugar.
Each wine is vegan but Willow, (because Willow was aged in a barrel lined with beeswax).
