Coral is a cider fermented with native yeast and aged on lees 8 months.
We bring in strawberries just after they've been harvested, mill them in our apple grinder, and let them hang out in the cider with our indigenous microflora for another 6 months. This vintage we added Maréchal Foch skins for a real nice Beaujolais Nouveau-like experience.
What's it like? The nose is outrageously strawberry, followed by intriguing grape tannins. The flavour is strawberry punch meets carbonic Gamay with a touch of salinity and the softest tannins.
