Gemini is a very sparkling wine/cider blend made in the méthode traditionnelle. 

It's a blend of crabapple cider and Ontario grapes: Sauvignon Blanc, Vidal, Chardonnay and De Chaunac.

We left it on the lees of Maréchal Foch for four months, and then in neutral oak for another three months to infuse texture and body. Finally, we let it age a further fifteen months on lees, in bottle. 

What's it like? Autolysis of our native yeast has added notes of fresh brioche and silk. Fine but powerful bubbles deliver each aroma to you like the head of a flower.

It's Ontario sparkling, with all of the rules thrown out. 

Chill well before opening. 16 cases made.
