Time and again we find ourselves searching for more bitterness in the beverages we’re drinking these days.
The subtle bitterness in things like Pilsner and Saison have made a big impression on us over years—making bitterness a bigger priority in our winemaking as well.
Elvi is unique because here we’ve layered the astringency of both apple and grape skins. As a part of the wine, it’s subtle. But that combination of structural apple tannin and fruitier, chewy grape tannins, elevates Elvi to a higher plane.
What's it like?: Peach punch. Darjeeling: steeped in the sun. Guava and fennel. Catching up with an old friend. Apple chalk.
Elvi is a blend of orange Riesling and Sauvignon Blanc, both harvested in 2020. Elvi spent 9 months on the skins of Dolgo crabapples, picked along the fenceline of an orchard in Beamsville.
Elvi is an overlap wine, bridging the gap between the different fruit worlds we live in.
34% Riesling. 66% Sauvignon Blanc. Both grown in Beamsville as well. Warehouse fermented in Guelph via our native yeast. 9 months of apple and grape skin maceration.
