Coral is a cider fermented with native yeast and aged on lees 8 months.
We bring in strawberries just after they've been harvested, mill them in our apple grinder, and let them hang out in the cider with our indigenous microflora for another 6 months.
The nose is outrageously strawberry. The flavour is strawberry punch with a touch of salinity and the softest strawberry tannins.
