Coral is a cider fermented with native yeast and aged on lees 8 months.
We added fresh, late season strawberries just after they'd been harvested, and let them hang out in the cider with our indigenous microflora for another 9 months. This year, we added one tonne of Zweigelt skins for good measure.
What's it like? The nose is outrageously strawberry, with a whiff of black pepper. Grape tannins ground the blend, drying out the jammyness and priming you perfectly for your next sip. Coral is like strawberry punch meets carbonic Gamay with a touch of salinity and the softest tannins.
