In the daytime, the sun sees everything. At night, only the moon witnesses the sun.
The bees are sleeping now, in that second-hand sun, dreaming dreams of haze-sweet pollen.
Good Evening is a blend of cider, skin contact Riesling and local honeycomb.
In the cidery, we think about each vessel as a book in our library.
The acidity of our cider, the herbal stone fruit notes of the Riesling and honeycomb from the bees responsible for all our fruit felt like chapters in the same story.
What's it like?: Your first whiff is full of sweet honey, poured over bread still warm from the oven.
The texture is a mix of delicate Riesling tannins, that sticky/waxy note I always associate with honeycomb, and weighty body from a year of ageing on the lees of two russet ciders.
Underlying that you'll find gentle notes of honey, peaches and beeswax — it smells like the experience of scraping through propolis before opening a hive.
Riesling's bright acid and natural honey notes bridge the nutty russet aroma and sweet, waxy texture of the comb in a way that feels like a little forehead kiss from a bee.
The honeycomb has left perceptual sweetness, without making the blend sweet.
Good Evening reminds us of all the reasons we like dry saison and wines made with a human touch.
