Wax On is our first resinated cider. It was inspired by the Retsina wines of Greece, and the pitch barrel pilsners of the Czech Republic.
Here's how we made it.
We started by foraging spruce resin from trees around the cidery. Then, we melted the resin down with beeswax from a local apiarist and coated the inside of a barrel with the sticky mixture.
After a day, we added our wild fermented cider to barrel age. 6 months later it's in bottle and tasting phenomenal.
What's it like? It's taken on a sweet, sappy aroma similar to honeycomb or pancake syrup. The flavour is bright Honeycrisp, soft spruce, and a touch of honey taffy.
The resin/spruce notes are quite soft and well integrated—Wax On is a real crowd pleaser. The apples truly shine through here.
