Txotx! is a sidra natural, inspired by the sidra of northern Spain. Those ciders are still, not sparkling, and meant to be poured from a height. Txotx! is no different.

Pouring from a height volatizes the aromas by adding oxygen to the cider — similar to decanting a wine, but really really fast. This bottle comes with a special cork that doubles as a spout, so you can long pour without spilling a drop.

Txotx! is a blend of a single barrel of vintage cider with apples from 2016, 2017 and 2018, and a Dolgo crabapple cider from 2025.

What's it like?: The barrelled portion aged in oak for 7 years, giving it weight, tannin texture. Dolgo crabapples lend floral and citrus aromatics with bright malic acidity.

The aroma is muddled pineapple, crabapple blossoms and sweet oak. It tastes of papaya and sweetgrass, with a touch of sweet body and tannin from the barrels.

Being still, it's easy to crush and perfect to pair with fatty cheeses, preserved meats and briny olives.
