Fermentation is the original way that humans have preserved a story: a season, a fleeting harvest, a time and a place. 

The web of biodiversity that is our ecosystem is the cornerstone from which we ferment.

We collect and ferment every fruit and botanical that we can find in Ontario, from farms across the province, or foraged in the fields and forests around us.

Ensconcing ourselves in these natural and people centred systems is both the beginning and end of this intimate journey; A life full of fruit, flowers and feelings.
