A Cadenza is a moment in music where an artist is allowed to play a solo freely—with artistic license to go outside of a rigid tempo.

Historically we've always made our cherry ciders with Montmorency cherries. This year, we decided to try one with Morello cherries.

Morello cherries are 'teinturier', meaning their flesh is red instead of white. This concentration of plant pigment also comes with a concentration of bright cherry aroma and quiet tannins.

What's it like? Cadenza has the savoury quality of wild fermented Pinot Noir, with an undercurrent of cola and cherry jolly ranchers. It's focused, tannic and full of life.
