Time and again we find ourselves searching for more bitterness in the beverages we’re drinking these days. Bitterness in things like Pilsner and Saison have made a big impression on us over the last few years. This has made bitterness a bigger priority in our winemaking as well.

Elvi is unique because here we’ve layered the bitterness of apple and grape skins. As a part of the wine, it’s subtle. But that combination of structural apple tannin and fruitier, chewy grape tannins, elevates Elvi to a higher plane.

Elvi is a blend of Riesling and Sauvignon Blanc, both harvested in 2018. She spent 9 months on the skins of Sauvignon Blanc and tiny Prairie crabapples foraged by our friend Nicolas.

Elvi is an overlap wine, bridging the gap between the different fruit worlds we live in.

32% Riesling. 68% Sauvignon Blanc. Both grown in Beamsville. Warehouse fermented in Guelph via our native yeast. 9 months of apple and grape skin maceration.
