Noix is a perry pressed in 2022 with a maceration of black walnuts.

After resting on foraged black walnuts, we left it to age in a single oak puncheon for 14 months. It's quite possibly the best perry we've made yet.

What's it like? Pear skins and the lightest whiff of cacao greet you in the aroma.

Ripe pears, tonka bean and nut butter meet your tongue first, with delicate layers of texture woven underneath: black walnut and oak tannins play together on the stage of your tongue.

The haunting edge of the pears, the grit of their flesh and the sweetness of their skins tug at the most sensitive spots in my memory. The walnuts give this memory depth, and make it uncomfortably real, like the tastiest lucid dream.
