In 2020 we got to work with some very exciting varietals from the University of Guelph's research orchard, grown by John Cline: Ontario's leading pomologist.

This bottle contains a blend of Baldwin, Medaille d'Or, Chisel Jersey, Winekist, Sweet Alford, Tolman Sweet and Esopus Spitzenburg apples.

We let it age in barrel and left it on fine lees for a couple of years, imparting body and weight to the blend.

What's it like?: This cuvée has aged beautifully in the last 3 years. It's rich and tropical, reminding us of kiwis and piña coladas. The bubbles are low here, letting the delicate notes of each apple shine.
