Callery Pear is a blend of spontaneously fermented perry, macerated on Callery Pears.
Callery Pears are tiny, inedible pears - each about the size of a pea. Completely unrecognizable as pears, they're incredibly hard and tannic.
Because we can't pick enough to press, we milled them and macerated them in our best tank of perry for a full year of skin contact. It has matured into something truly beautiful.
What's it like? Callery Pear smells like Muscat and white flowers. High acid, with a touch of pear sweetness, it's intense but balanced. The tannins are moderate— texturally it's like chewing on pear skins or crunching on pear grit. It's mouthwateringly tart, but easily has our vote for perry of the year.
