Apricot Piquette 30L
Piquette is an historical beverage, originally made by farmhands in France. They'd take pressed grape skins, soak them in water, and press them again to make a low-ABV wine, to have something crushable to drink during hot days in the field.
This piquette was made by ageing Vidal skins in saline water from our Guelph aquifer for one week. We blended in a small amount of almost every stone fruit we processed in 2025: apricots, nectarines and two different kinds of peaches.
It smells exactly like you think it would, like every orange stone fruit under the Ontario sun. Vidal plays a structural role; a honeyed, lemon bergamot note underneath sticky apricot and peach nectar.
It's pithy apricot, freshwater salinity and silky peach. Drink fresh.
