When the Apricots Bloom
‘When the Apricots Bloom’ is a literal translation of an Arabic idiom referring to something that has little chance of happening.
Apricots have such a short season regardless of where they’re grown, that it feels like a miracle when we’re able to get them in. This is the first time we have in 6 years.
We’ve paired them with other ephemeral blossoms: dandelions, elderflower and chamomile, which lend perceptual sweetness to the tart, malic stone fruit.
What’s it like?: It starts with incredibly punchy apricot on the nose. The apricot is so powerful that I have to put it down and smell it again. Each flower is woven underneath, sweet elderflower, perfumed chamomile, and grassy dandelion play just behind the fruit.
The flavour is tart, but not too tart, the apricots softened by the salinity of early season apples. Peaches and nectarines come through here too, each lending their sweet nectar, moderating the tart apricots a little more.
It’s not an easy thing to capture apricots at their peak, I truly hope you enjoy.
