Ostara: Hyssop
Hyssop is an ancient herb related to mint. It tastes like anise, Thai basil and cinnamon bark. The wild bees by the cidery swarm it every summer.
We love it too. Ostara Hyssop is a cider aged on golden plums for 8 months, with hyssop we grew organically, just behind the cidery.
What's it like? Your first whiff is punchy star anise. This cider is high acid, but hyssop flowers play so well with it, bringing to mind visions of licorice rhubarb tarts made by your favourite grandma.
It's punchy and beautifully floral. If you love tart cider and warm spices, this is for you.

Ostara is our name for a series of ciders pairing golden plums and flowers. Each blend is a 3 year project. In this one, the apples were harvested in 2018, plums in 2019, and we harvested the organic Hyssop in the spring of 2020.
