Slow and Steady
Slow and Steady is a cider we started in 2021, letting the apples wild ferment and age until the following summer.
Then, we foraged sumac and goldenrod, leaving them in the cider for months before bottling. It has been aged in glass for 2 full years.
Driving past swathes of Sumac and Goldenrod is an essential part of the autumnal Ontario experience. Like everything in nature, it's fleeting. Perpetually transient.
What's it like?: The aroma is floral and botanical—like autumn air, pregnant with pollen. Sunflower seeds, goldenrod and dandelion: September pasture.
Sumac acidity hits first, followed by lemon pepper and olive stones. Pollen-sweet freshness balances the herbal qualities, but only just. This one of the most savoury ciders we've made.
