Whistling in the Dark
Whistling in the Dark is a sweet red vermouth, made seasonally with botanicals from Ontario only. It was the first vermouth we ever made, and we've been improving on it for the last 4 years.
Anyone can make aperitifs with imported citrus peel and coriander, but we wanted to see what would happen if you only used seasonal, local ingredients.
Whistling in the Dark is made from a base of apples, cherries, blueberries and De Chaunac and Gewürztraminer wine. The botanicals here are anise hyssop, yarrow, orange mint, wormwood, and birch bark.
This vermouth is a solera of two vintages: we blended a single barrel of last year's vermouth, with the 2024 vintage to make these bottles.
What's it like? Incredibly balanced this year, Whistling in the Dark is an earthy, botanical treat. Cherry-like De Chaunac and anise hyssop dominate the aroma, while wormwood leaves an assertive bitterness.
It's a perfectly balanced vermouth, it works equally well for the European tradition of quaffing it on its own, over ice, with a little soda or blending into your favourite cocktails.
(Yes, it's perfect in negronis too.)

Ingredients: Apples, cherries, grapes, blueberries, wormwood, cane sugar, anise hyssop, yarrow, mint and birch bark. Gluten free.
Wild ferment. Unfiltered and unfined. Vegan.
