Cherry Wine
Cherry Wine is a feather in our cap: some of the nicest juice from one of our favourite fruits.
The acidity, juicy fruit and sweet spice notes of the Montmorency feel like quintessential Ontario summer.
We bring our cherries in within 24 hours of harvest, and let them press themselves in a stainless steel tank, using just the free run juice for cherry wine.
This vintage was left on skins for three months, and aged on lees for another six months in a single oak puncheon before release.
What's it like? Bright acidity, savoury fruit with juicy tannins. This vintage is richer and more textured than ever before from the extended skin contact. Think summer cherry pie, with a dusting of cinnamon, nutmeg and clove.
The lees have added a silken depth, while the extended skin contact has added structure and tannin to this vintage.
It's also ever-so-slightly sparkling from a bit of malolactic fermentation in bottle. Think Vinho Verde, but cherries!
Drink it on its own before dinner, or by the fire afterwards with a good book.
