We've fantasized for years about getting tropical flavours out of local ingredients. And lemon verbena works so well it almost feels like cheating. Lemon verbena almost tastes better than a lemon itself—it's a combination of lemon blossom, juice and zest.

What's it like? The lemon/floral notes of the verbena lift our Ontario strawberries to never-before-seen heights of crushability. Mirabelle is big strawberry, soft acid and zesty bergamot. It's strawberry lemonade, without the sweetness.
