Sparkling Blueberry Wine
This is an adventure. Blueberry wine with Gewürztraminer and Maréchal Foch.
We start at the edge of the forest, weaving through the blackberry brambles.
After a few hours of trekking, we come across our prize: delightfully plump blueberries. We mash them into a compote and put that in a clay jar.
We collect the liquid that oozes out of this compote-in-clay, and that's what this blend drinks like.
(We didn't do any of that, but it kind of tastes like we did).
What's it like? Blueberry wine smells like a memory of Pinot Noir, clay and green table grapes. It's got the sticky acids and delicate tannins unique to blueberries: like a blueberry skin stuck to your molars (in a good way).

Wild ferment. Zero added sugar. Vegan.
What to pair it with: This vintage doesn't linger in your mouth for long, making it great for soft cheeses, white fish and lighter salads. It's perfect as an aperitif on its own too.
